Well, I'm just taking a guess here, but it seems pretty obvious to me that the key feature of these photographs that gives them the 'model' look is the very narrow depth of field. Aerial photographs usually have a completely flat focus plane - i.e. apparently infinite depth of field, but by narrowing the depth of field the same focusing effects occur as when photographing small objects from close up - thus the 'model' look. I think I'm going to try to emulate this in Photoshop and see what comes up.
